摘要
研究了竹叶黄酮类物质与锌(II)、铜(II)络合物对亚硝酸盐清除、亚硝胺合成阻断的能力,并与Vc进行比较。结果表明,在体外模拟胃液条件下,竹叶黄酮与锌(II)、铜(II)络合后活性能力显著提高。黄酮-Zn络合物、黄酮-Cu络合物、Vc及芦丁标准品对亚硝酸盐清除率达50%时的质量浓度IC50分别为0.005、0.006、0.021、0.019 mg/mL,对亚硝胺合成的阻断率达50%时的质量浓度IC50分别为0.023、0.007、0.017、0.187 mg/mL。
In this study, the extracting of flavonoids from bamboo leaf and the activity of the metal complexes were investigated. The effects of scavenging nitrite compounds and blocking the synthetic reaction of nitrosamine were evaluated and the activity was compared with Vc. The results are shown as flows: under the vitro simulation gastric juice condition, the capacity of copper(II) complex and zinc(II) complex obviously enhances. While scavenging ratio of nitrite reached 50%, the concentrations of IC50 (mg/ mL) of zinc(II) complex, copper(II) complex, Vc and rutin were 0.005, 0.006, 0.021 and 0.019, respectively.While the inhibitory ratio of synthesis of nitrosamine reached 50%, and those were 0.023, 0.007, 0.017, 0.187 mg/mL, respectively.
