摘要
魔芋粉具有较高的保健功效,也是一种安全、环保的果蔬涂膜保鲜剂和天然食品添加剂。本文在阐述魔芋粉涂膜保鲜果蔬机理的基础上,综述魔芋粉在果蔬采后贮藏保鲜中的应用研究进展,以期为魔芋粉在采后果蔬保鲜中的进一步开发利用提供理论依据。
Konjak powder had high health function and it was also the safety and environmental film coating antistaling agent of fruits and vegetables and natural food additives. Based on introducing the mechanism of konjak powder on film coating preservation of fruits and vegetables, this paper reviewed the research progress of application of konjak powder on postharvest storage of fruits and vegetables, in order to provide a theoretical basis for further development and utilization of konjak powder in preservation of postharvest fruits and vegetables.
