摘要
本试验采用复因素随机实验设计进行了黑玉米挂面的研制 ,结果表明 ,黑玉米粉与小麦精粉按 3.5∶6 .5的比例混合 ,再加入 7%的玉米淀粉磷酸酯 ,可制得质量较好的黑玉米挂面。
Designed on the basis of multifactor experiments, black corn vermicelli was developed. The results showed that having black corn flour mixed with wheat flour in a proportion of 3.5:6.5 and 7% corn amylophosphate added, quality black corn vermicelli could be produced.
