摘要
介绍了多不饱和脂肪酸(PUFAs)的生理功能和一些常规的制取方法;阐述了PUFAs的生物合成途径以及发酵工程、生物酶工程在PUFAs生物合成上的应用概况和工业化生产前景。同时,对PUFAs在食品工业中的应用也作了简要的叙述。
The review illustrates physiological functions and routine collection of PUFAs.But with the rapid development of the biological technique,fermentation engineering,biological enzyme engineering are used in the synthesis of PUFAs,this makes it possible that PUFAs is produced in a large scale.The paper elaborates emphatically biosynthesis route of PUFAs,applied situation and industrialization manufacture's prospect of fermentation engineering and biological enzyme engineering on its biosynthesis,and application of PUFAs in food industry.
