摘要
啤酒泡沫性能是啤酒质量的一项重要指标。其影响因素有蛋白质与疏水多肽、二氧化碳、酒花成分、多酚、酵母、脂类、麦汁浓度、杀菌、离心等。通过控制整个啤酒生命周期改善啤酒泡沫性能,包括:原料选择、制麦工艺、糖化工艺、发酵工艺、过滤工艺、包装过程、转移输送、清洁卫生及售后服务。
Beer foam property is an important index of beer quality.The influencing factors include protein and hydrophobic polypeptide,carbon dioxide,hops,polyphenols,yeast,lipids,wort concen-tration,pasteurization,cen trifugation,etc.By controlling the whole beer production,the performance of beer foam can be improved,including raw material selection,malting process,saccharification process,fermentation process,filtration process,packaging process,transportation,sanitation and after-sale service.
