摘要对以精白米为主食的皖南山区某农村16户63人维生素B1缺乏症的调查研究表明,7人出现了VitB1缺乏症状(11.11%),一次尿VitB1ug/g肌酐测定,明显低于对照组,精白米及膳食中VitB1测定也见明显不足。分析原因为由于膳食结构不合理,稻米的加工、烹调不科学,造成了VitB1长期摄入不足;加之在夏季高温高强度劳动条件下,人体对热量和VitB1的需要量增加,VitB1随汗液丢失过多,从而导致了以周围神经病变,双下肢水肿为主要特征的急性混合型脚气病———VitB1缺乏症。
Vitamin B1 Deficiency status of 63 peasants from 16 families in south mountain area, where peoples fed mainly on refined rice, was investigated. The results showed that 7 peasants suffered from Vitamin B1 Deficiency (11.11%). A measure result of Vitamin B1 ug/g creatinine in urine indicated that Vitamin B1 ug/g creatinine in experiment group was lower than that in control group. Vitamin B1 in refined rice and their deit was also low. Unreasonable diet pattern, unscientific rice processing and cooking method might account for the Vitamin B1 deficiency. Mean while, under the condition of high temperature and high intensity of labor in summer and autumn, people's requirement for Vitamin B1 and heat increased. Vitamin B1 lost with sweat. Thus, pathological changes in peripheral nerves and oedema in lower limbers occured due to Vitamin B1 deficiency.
