本篇叙述了用碱处理方法将绿豆淀粉分离,用差示扫描量热法对绿豆淀粉的糊化和老化特征加以研究,并与酸变性绿豆淀粉在糊化和老化过程中的热焓和温度变化进行了比较.
Starch from mung bean was separated by alikali treatment.Theapplication of differential scanning colorimetry on the phase translationof the separated starch was discussed.Enthalpy and gelatinizationtemperature changes during gelatinization and retrogradation werecompared with the mung bean starch of acid treatment.
