摘要
目的 通过观察肝组织脂质过氧化和元素含量的变化 ,探讨烹调油烟致肝损伤的毒作用机理。方法 利用SD大鼠动式吸入烹调油烟浓度 ( 43± 4)mg/m3为染毒组 ,吸入加热空气 ( 2 4~ 2 8℃ )为阴性对照组 ,分别于染毒第 2 0、40、60天收集肝脏标本测定肝组织SOD活性和MDA及Zn、Cu、Fe、Ca含量。结果 烹调油烟可使肝组织MDA含量增高 ,SOD活性下降 ;钙铁值随染毒时间延长增多 ,锌降低。结论 烹调油烟致肝脂质过氧化和元素钙铁超载锌降低 。
Objective To observe the liver tissue lesion and its mechanism in SD rats inhaled cooking oil fumes (COF). Methods After inhalation of COF [(43±4) mg/m 3, 30 min/d, 20, 40, 60 days], the activity of superoxide dismutase (SOD) and the content of the malondialdehyde (MDA) and zinc, copper, iron and calcium in liver tissues in rats were observed. Results COF inhalation group appeared to have higher MDA content and lower SOD acitivities than that of the control group. The contents of iron and calcium in liver increased gradually as the hepatic damage progressed, but zinc decreased. Conclusion The cooking oil fumes might induce lipid peroxidation of liver in rats with iron calcium overload, and zinc decrease might play roles in liver tissue damage.
