摘要
鳄鱼有较高的食用价值、药用保健价值及经济价值。我国的鳄鱼养殖已具一定规模,可开发利用性强。现有研究表明养殖鳄鱼肉是高蛋白质、低脂肪的良好肉质;其蛋白质的氨基酸组成全面;脂肪酸中不饱和脂肪酸含量丰富;富含铁、锌及钙。此外鳄鱼肉及血液中还含多种功能性成分,具有重要的药用保健价值。充分研究鳄鱼的食用及药用价值对养殖鳄鱼市场的发展具有重要意义。
Chinese farmed crocodile have a high nutritional quality, medical health care value and economic value.The rapid growth in the number of farmed crocodiles provides the basis for the development and utilization.
