摘要
乳糖是哺乳动物乳汁中重要的营养成分,经乳糖酶分解吸收后参与机体组织细胞的生命活动,在人类健康和营养方面发挥重要作用.由于乳糖酶缺乏所导致的乳糖不耐受症状,在中国人群中发生率很高,因此限制了很大一部分国人对牛奶的摄入,而牛奶又是人类良好的优质蛋白、矿物质及维生素的天然来源,故乳糖酶缺乏问题显得尤为突出.
Lactose is one of the important nutrients in milk. It is decomposed by the lactase enzyme and plays an important role in the life activities of cells in human health. Due to the lack of lactase, the symptoms of lactose intolerance occur highly in Chinese population, thus limiting the large part of the people to drink milk. Milk is a good source of high-quality protein, minerals and vitamins for the human, so the problem of lactase de- ficiency also seems particularly severe.
