摘要
本文简述了抗氧化肽的来源,在分析归纳抗氧化能力的体外评价方法的基础上,增加不同研究间的可比性,统一抗氧化能力指标;提出了建立一套通用的评价体系的可能性,指出了混合肽各组分之间可能存在的一些相互作用关系,以期为更好地了解抗氧化肽的作用机理。本文为进一步促进抗氧化肽的开发利用提供理论依据。
In this paper, the source of antioxidant peptides was simply introduced, and it's evaluation methods in vitro were mainly described. Besides, the possibility of establishment of general evaluation system and the interaction relationship between different peptides were discussed. The study will provide the information about the action mechanism of antioxidant peptide, increase the comparability of results and promote the development and utilization of antioxidant peptides.
