摘要
蛋白质是乳制品质量评价的重要指标,其检测方法有凯氏定氮法、杜马斯燃烧法、近红外光谱法及多种新兴的快速检测方法,本文旨在综述乳制品中蛋白质的检测方法,以便检测工作者选择合适的蛋白质检测方法,作者认为凯氏定氮法不仅适用于乳制品中蛋白质含量的测定,而且适用于其他样品的测定,近红外光谱法是一种快捷的测试方法,可以在工业过程中实现实时在线检测,杜马斯燃烧法检测速度快,效果好。甲醛滴定法有效地解决了非蛋白质类的含氮物质对乳制品中蛋白质测定结果的干扰问题,适用于乳制品中蛋白质的快速定量检验。
Protein is an important index to evaluate the quality of dairy products. In this paper, we compared different methods of protein detection in dairy products, such as Kjeldahl method, combustion method, near infrared spectroscopy and a variety of new rapid detection methods, in order to suggest appropriate choices for different protein detection requirement. Through the comparison, we considered that Kjeldahl nitrogen method is suitable for protein content detection not only in dairy products, but also in other samples; near infrared spectroscopy is a rapid measuring method, which can realize the real-time online detection in industrial process. Dumas combustion method showed fast detection speed and good effect. The formaldehyde titration method can overcome the non-protein nitrogenous substances interference effectively in dairy products protein detection and is suitable for fast quantitative test in dairy products.
