摘要
本文研究不同的电场强度、频率、波形、处理时间及不同的介质对毛霉蛋白酶活力的影响。在一定范围内 ,电场有提高酶活力的作用。在含盐 7%的酒水中 ,酶的活力受到抑制 :但经电场处理后 ,在此介质中酶活的增长率最大的达 2 0 % 。
This paper studied influence on mucor protease of different electric field,frequeny、waveform、process time and mediun.Under definite range,electric can prove enzyme activity.In the alcoholic drink contaning 7% salt,enzyme activity was restrained.After electric field treatment,enzyme activity growth rate reached 20% in this medium,and advantaged than water medium.
