摘要
微胶囊化是粉末油脂制备中一项重要的应用技术,已在食品工业领域得到广泛应用。本文简要介绍了微胶囊化粉末油脂的制备原理,分析用于油脂微胶囊化的壁材,总结了多种油脂微胶囊化技术尤其是喷雾干燥技术,以及粉末油脂的主要应用。
Microcapsulated technology was an important application technique, it had been widely used in various food industries recently.The production principle of microcapsulated oil and fat powder was introduced briefly,the characteristics of material used for capsule wall were analyzed, various main technology especially the spray drying technology,and main application of powdered oils were summarized.
