摘要
[目的]本研究以湘中黑牛肝脏为研究对象,旨在为其开发利用提供理论依据。[方法]采用国标及国内外的方法测定其食用品质、营养成分、活性物质含量。[结果]表明,湘中黑牛肝脏色度较好,保水性能及加工性能较好,蛋白质、矿物质含量丰富,营养价值高。[结论]可见,湘中黑牛肝脏是一种食用品质较高,营养丰富、富含活性物质的健康食品,有较大开发利用价值。
[Objective] In order to provide a theoretical basis and get maximum utilization of the central Hunan black cattle liver. [Methods]The standard and conventional methods at home and abroad were used to determinate the liver meat quality, routine nutrition quality and active Ingredients. [Results]The results showed that the central Hunan black cattle liver had some characteristics of better water retention capacity and better process ability, and had more proteins mineral substances. [Conclusion]Central Hunan black cattle livers could be the high quality healthy food and implied a high developmental value.
