摘要
目的了解安阳市食品中食源性致病菌的污染情况,为食品安全风险评估提供依据。方法采集安阳市8大类324件食品,依据国家标准GB4789-2010,检测沙门菌、志贺菌、大肠埃希菌O157:H7、单核细胞增生李斯特菌、金黄色葡萄球菌、蜡样芽孢杆菌和阪崎肠杆菌7种致病菌。结果检测样品324份,检出致病菌41株,总检出率为12.65%。在7种致病菌中,以蜡样芽孢杆菌检出率为最高(7.72%),其次是金黄色葡萄球菌(2.78%)和单增李斯特菌(1.54%),沙门菌为0.62%。结论安阳市居民主要消费食品存在食源性致病菌污染,监督部门应提供有效的监管措施,避免食源性食物中毒的发生。
Objective To understand the contamination status of food - borne pathogens in food of Anyang, and to provide sci- entific basis for food safety evaluation. Methods A total of 324 samples in 8 kinds were collected from Anyang city to detect Salmonella, Shigella, EHEC O157 :H7, Listeria monocytogenes, Staphylococcus aureus, Bacillus cereus and Enterobacter sakaza- kii in accordance with GB4789 -2010. Results A total of 324 samples were detected, 41 strains of pathogens were positive with the total detection rate of 12.65%. Bacillus cereus had the highest detection rate(7.72% ), followed by the Staphylococcus aureus (2.78%), Listeria monocytogenes ( 1.54% ), and Salmonella (0. 62% ). Conclusion The food in Anyang is contami- nated by food borne pathogens, suggesting the government should take effective measures to prevent the occurrence of food - borne diseases.
