摘要
赵荣光先生是中国饮食文化从饮食史研究到食学建构重大转变的主要奠基人,其饮食文化研究始于20世纪80年代。赵荣光先生倡导、身体力行的中华食学研究,已经从单纯的饮食史研究、烹饪研究,扩展到了饮食思想、地域饮食、饮食礼仪、不同阶层饮食、饮食传播和交流、饮食安全等领域。他开创了与国际饮食文化界对话、交流、合作的新时期。其倡导及开启之功,使中国饮食文化研究有了今天的繁荣局面。
Mr. ZHAO Rong-guang is the principal founder of the Chinese catering culture in its transformation from catering cuhure history research to catering culture construction. He started up his studies on catering cul- ture in the 1980s. Mr. ZHAO Rong-guang advocates study of the Chinese catering culture in a hands-on way, which has extended from pute catering culture history research, cuisine research to catering thinking, regional catering, catering etiquette, catering of various classes, catering communication and catering safety, etc. He initi- ates a new age for a dialog, exchange and cooperation with international culture communities. His advocating and opening studies on the Chinese catering culture contribute to today's prosperity of the Chinese catering culture studies.
