贵妃鸡、怀乡鸡和北京油鸡肌纤维特性与肉品质相关性分析 被引量:4

摘要 试验对120日龄贵妃鸡、怀乡鸡和北京油鸡公鸡的腿肌肉品质、肌纤维特性进行测定,并对其相关性进行分析。结果表明,北京油鸡肉色大于贵妃鸡,贵妃鸡大于怀乡鸡,分别相差1.66和2.54,差异显著(P<0.05),pH差异不显著(P>0.05);贵妃鸡和怀乡鸡肌肉滴水损失大于北京油鸡,分别高出2.16%和2.59%,差异显著(P<0.05);北京油鸡肌纤维特性优于贵妃鸡,贵妃鸡优于怀乡鸡,直径分别相差0.68和0.59μm,密度分别相差373.67和142.07根/mm2,差异显著(P<0.05)。3种鸡肌纤维直径与密度呈负相关关系,与肉色、pH和滴水损失呈正相关关系,相关性不显著(P>0.05)。 In this study, meat quality and muscle fiber were tested, at the same time, relationship between fiber and meat quality were analyzed of Princess, Huaixiang and Beijing You cocks raised under the same conditions for 120 days. The results showed that the muscle color was significant difference (P〈0. 05), Beijing You cocks was higher than Princess cocks by 1.66, while Princess cocks was higher than Huaixiang cocks by 2.54, there was no significant difference in pH value of three differ- ent broilers (P〉0.05), in the drop water loss, Beijing You cocks was significant lower than Princess eocks by 2. 16%, and was significant lower than Huaixiang cocks by 2.59% (P〈0.05). In the muscle fiber characteristic, Beijing You coeks was better than Princess cocks, while the Princess cocks was better than Huaixiang cocks, the leg muscle diameter were lower by 0.68 and 0.59μm, respectively, however, the leg muscle density were lower by 373.67 and 142.07 root/mm2 , respectively (P〈0.05). There were negative correlation between fiber diameter and density of Princess, Huaixiang and Beijing You chick- en, however, the muscle fiber charaeteristie of Princess, Huaixiang and Beijing You chicken was positive correlation among meat color, pH value and drop water loss, it was no significant difference (P〉0.05).
