摘要
从四川地区采集4种生花的泡菜样品,通过马铃薯土豆培养基(PDA)和营养琼脂培养基(NA)对生花泡菜中的微生物进行分离,共分离到不同菌落形态的菌株8株,经过回接实验验证,该8株菌均能引起泡菜不同程度腐败。8株菌通过菌落PCR扩增其16S rDNA/18S rDNA基因序列并测序,经序列比对后,构建系统发育树,结果证实8株菌中有4株为细菌,4株为酵母菌。其中3株细菌被鉴定为B.subtilis、1株被鉴定为B.altitudinis;2株真菌被鉴定为P.manshurica,1株为P.kudriavzevii,1株为C.tropicalis。
Eight spoilage microbes with different colony morphologies were isolated from four different spoiled Sichuan pickle samples by using PDA and NA media. Unspoiled samples were spoiled when artificially inoculated with these strains. They were identified as 4 bacteria including 3 B. subtilis and 1 B. altitudinis and 4 yeasts including 2 13. manshurica, 1 P. kudriavzevii and 1 C. tropicalis through PCR amplification and sequence analysis of 16S rDNA/18S rDNA and phylogenetic tree analysis.
