摘要
超氧化物歧化酶(superoxide dismutase,简称SOD)是一种能够催化超氧化物通过歧化反应转化为氧气和过氧化氢的酶。它广泛存在于各类动物、植物、微生物中,是一种重要的抗氧化剂,保护暴露于氧气中的细胞。近年来,SOD在农业和医药等多个领域都展现出了巨大的应用价值和开发前景。对SOD的功能、抗氧化机制、类型以及生产方式等进行了概述,并重点综述了SOD在工业(医药工业,食品和日化工业)和农业上的的应用情况及发展潜力,以期为我国SOD产品的深入开发和利用提供参考。
Superoxide dismutase (SOD) catalyzes the disproportionation of univalently reduced oxygen to generate oxygen and hydrogen peroxide. SOD has been widely discovered in living organisms, including animals, plants and microorganisms and has been demonstrated to be an important antioxidant, which protects the cells exposed to the toxicity of oxygen. Recently, SOD has displayed huge application value and development prospect. This paper gave an sumafized SOD's function, its anti-oxygen mechanism, types and production mode, etc., and also expounds the application situation and development potential of SOD in industries (pharmaceuticals, food and personal care products) and agricuhure, so as to provide references for the further development and utilization of SOD products in China.
