摘要
在概述大豆蛋白的组成、结构和性质的基础上,对大豆蛋白膜的成膜机理、成膜方法及其性能改进方法的研究进展进行了综述.认为今后的研究重点是大豆蛋白的各种物理和化学改性以增强其机械性能、阻湿性能和耐水性能,从而制备新型可降解的环境友好材料.
Based on summarizing the composition, structure and properties of soy protein, soy protein film formation mechanism, forming method and its performance improvement research progress were re- viewed in this paper. The research was focused on the future of soy protein a variety of physical and chemical modification to enhance its mechanical properties, water resistance and moisture barrier proper- ties, with which to prepare new biodegradable environment-friendly materials.
