摘要 光敏杀菌是一种新型非热杀菌技术,通过破坏细胞膜、使不同酶失活以及损坏DNA结构来杀灭食品中的致病菌,从而具有杀菌效果。文章主要介绍了光敏杀菌技术的构成和其在食品工业中的研究现状及应用前景。 As a new method of non-thermal sterilization,photosensitization achieves the purpose of sterilization by damaging cell membrane,making the enzyme inactive and destroying the structure of DNA. The detail of photosensitization and its research actuality and application in food were reviewed.
