摘要
分别以体质量300~400、400~500、500~600kg的3组陇东肉牛胴体上取腰大肌、背最长肌和股二头肌作为标本,通过HE染色石蜡切片技术,在显微镜下进行观测和分析.结果表明:陇东肉牛腰大肌、背最长肌和股二头肌的肌纤维直径分别为(29.04±6.99)、(43.60±12.60)、(45.95±13.63)μm.腰大肌、背最长肌和股二头肌的肌纤维密度分别为(441.07±21.64)、(238.10±19.80)、(191.88±13.89)n/mm2.陇东肉牛随着体质量的增加,肌纤维不断变粗,结缔组织含量逐渐增加,肌纤维密度变化差异不显著(P>0.05);在腰大肌、背最长肌和股二头肌3块肌肉中,腰大肌的肌纤维直径最小密度最大;背最长肌和股二头肌的结缔组织含量比腰大肌的高.
In order to make clear of the histological features and changes of muscle of I.ongdong beef catalc-psoas major, longissimus dorsi and biceps femoris of cow carcass were taken from three different body weights (300-400 kg.400-500 kg and 500-600 kg). The experiment was studied by paraffin em hedding and HE staining, the result was observed and analyzed under the microscope. The results indicated that 1he muscle fiber diameter of psoas major, longissimus dorsi and biceps femoris were (29.04±6.99) μm. (3.60± 12. 61 )μm and (45. 95 ±13. 63)μm. The muscle fiber density of Psoas major, I.ongissimus dorsi and Biceps femoris were (441.07~38. 30) n/mm^2, (238. 1 ±19. 80)n/mm^2 and (191. 88±49. 89) n/mm. The results showed that, as body weight increased,muscle fiber diameter and connective tissue in creased, but nmsele fiber density had no significant differences (P^0. 05). Among psoas major, longissimus dorsi and biceps femoris,the muscle fiber diameter of psoas major was the smallest and the muscle density was the: largest. The connective tissue of longissimus dorsi and biceps femoris were much richer than that of psoas major.
