摘要 鲜切果蔬由于失去外部表皮组织的保护而容易受到微生物污染,致腐微生物引起鲜切产品变质腐烂,致病微生物危害人类健康。目前由食源性病原微生物引起食源性疾病越来越受到人们的关注,本文就鲜切果蔬中常见的致病微生物种类及其PCR检测方法的研究现状进行综述。 Fresh-cut fruits and vegetables are vulnerably contaminated by foodborne microorganisms because of Iossing the protection of epidermal issue. Putrescence microorganisms result in fresh-cut product decay and bacterial pathogens do harm to human being' s health.At present, people have been paying more and more attention to the foodborne illness by the foodborne microorganisms.In this paper,an introduction to the species of pathogens in fresh-cut fruits and vegetables as well as the PCR rapid detection was reviewed.
