Changes in active oxygen and polyamine metabolism and their relation to flesh woodiness development in SO 2 treated cold stored loquat (Eriobotrya japonica Lindl. cv. Dahongpao) fruits were investigated. The results indicated that SO 2 promoted the activities of superoxide dismutase (SOD) and catalase (CAT) (Fig.1A, B), inhibited the increase in peroxidase (POD) activity (Fig.1C) and H 2O 2 level (Fig.2). In fruits treated with SO 2, little changes were detected in spermine (Spm) and spermidine [HJ6”:2](Spd) levels throughout the experimental period (Fig.3A, B), the accumulation of putrescine (Put) was greatly inhibited (Fig. 3C), and no symptoms of flesh woodiness was observed after 5 weeks. The experimental results suggest that SO 2 may maintain the balance between the formation and detoxification of active oxygen species and inhibit their accumulation, thereby preventing the development of flesh woodiness in cold stored loquat fruits.
