摘要
测定了山麻鸭和飞鸭绿壳蛋的蛋壳色素和蛋品质。结果表明,飞鸭蛋明显重于山麻鸭蛋(P<0.05),而且蛋壳强度差异极显著(P<0.01);山麻鸭蛋的蛋黄颜色深于飞鸭蛋,差异极显著(P<0.01)。两种鸭蛋壳色素提取物的吸收光谱基本一致,其最大吸收峰为412 nm,其次分别为380和680 nm。蛋壳色素的主要成分是胆绿素和原卟啉,山麻鸭与飞鸭绿壳蛋蛋壳中胆绿素含量分别是原卟啉的4.08倍与5.11倍,差异极显著(P<0.01)。
The egg quality and the eggshell pigment of Shan partridge ducks and Fei ducks were analyzed. The results showed that the egg weights of Fei ducks were significantly weighter than shah partridge duck's (P〈0.05), the shell strength between them showed significantly differences(P〈O.01) and yolk color of Shah partridge duck was significantly darker than Fei duck's (P〈0.01). The maxmium spectrum of extract was 412 nm and the next were 380,680nm respectively. The main com- ponents of the eggshell pigment were biliverdin and protoporphyrin, and the contents of biliverdin were 4.08, 5.11 times (P〈 0.01 ) as many as the contents of protoporphyrin in the eggshell of Shun partridge ducks and Fei ducks.
