2011—2012年北京市昌平区食品中食源性致病菌污染状况 被引量:4

Status of foodborne pathogens contamination of food in Changping District of Beijing City from 2011-2012

摘要 目的了解北京市昌平区主要消费食品中食源性致病菌的污染状况,寻找引起食源性疾病的重点食品,对可能发生的食源性疾病进行预测和预报。方法 2011—2012年采集昌平区市售14类共275件食品样品进行10种食源性致病菌的分离与鉴定。结果 275件样品中共检出致病菌17株,总检出率为6.18%。生肉类和鲜冻水产品污染最为严重(20.00%),其次是生食动物性水产品(11.76%)。金黄色葡萄球菌的检出率为6.93%,副溶血性弧菌检出率为1.85%,其他致病菌未检出。结论生肉类、鲜冻水产品和生食动物性水产品是北京市昌平区市售食品的主要污染品种,金黄色葡萄球菌、副溶血性弧菌是污染食品的主要致病菌。 [ Objective] To understand the contamination status of foodborne pathogens in main food products in Changping District of Beijing City, to identify the main food that caused the foodborne disease, and predict the foodborne disease. [ Methods ] From 2011 - 2012, 10 kinds of foodborne pathogens were isolated and identified in 275 samples of 14 kinds of food collected from Chang- ping District. [ Results] A total of 17 strains of pathogens (6.18% ) were isolated. The polluted status in raw meat and fresh frozen aquatic products were t most serious( 20.00% ) , followed by the raw food animal aquatic products[ 11.76% ). The positive rates of Staphylococcus aureus was 6.93% , that of vibrio parahemolyticus was 1.85% , other pathogenic bacteria were not detected. [ Conclusion ] Raw meat, fresh frozen aquatic products and raw food animal aquatic products axe the main contaminated foods in Chang-ping District of Beijing City. Staphylococcus aureus and Vibrio parahemolyticus are the main foodborne pathogens.
