摘要 建立了微波消解电感耦合等离子体发射光谱法测定天然复合调味品中微量元素和重金属含量的方法,并用该法测定了10种天然复合调味品中Fe,Mn,Cu,Zn,Cr,Cd和Pb等元素的含量。该方法的加标回收率在96.0%~103.0%之间,相对标准偏差RSD≤4.50%,结果表明:天然复合调味品中Fe和Mn含量低于单一天然香料调味品,与味精、鸡精等其他化学合成调味品相比,天然复合香料调味品中Fe,Mn,Cu,Zn,Cr含量较高,而其Cu/Zn比值较低,重金属含量普遍较低,此测定结果可为探讨天然复合香料调味品的保健作用与微量元素含量的相关性提供科学数据。 A method is studied for the analysis of trace elements in natural compound condiment by using ICP-AES with microwave digestion. The contents of trace elements such as Fe, Mn, Cu, Zn, Cr, Cd and Pb in 10 kinds of natural compound condiment are determined. The recoveries obtained by the method are from 96.0% to 103.0%, and the relative standard deviation (RSD) is lower than or equal to 4.50%. The results show that the contents of Fe and Mn in natural compound condiment are lower than those in natural single condiment. The concentrations of Fe, Mn, Cu, Zn and Cr in natural compound condiment are higher than gourmet powder, chicken extract and other chemical condiment, while the ratio of Cu and Zn is lower; the contents of heavy metals in the natural compound condiment are lower. The results would provide scientific data for the study on the correlations between trace elements and health functions in natural comnound condiment.
