贵州麻江冷冻蓝莓特征性成分分析 被引量:5

An Analysis on Specific Components of Guizhou Majiang Frozen Blueberry

摘要 运用高效液相色谱法等对贵州麻江县产冷冻蓝莓中的糖、矿质元素、氨基酸、花青素、有机酸、维生素等成分进行了分析与测定。结果表明,麻江冷冻蓝莓中糖含量为20.1 g/100 g,富含钙、铁、镁、磷、钾、硒等多种矿质元素,且富含15种氨基酸;花青素含量为704.82 mg/100 g,包含苹果酸、乳酸、乙酸、柠檬酸四种有机酸;其中熊果苷含量为0.785 mg/100 g,叶酸含量为2.693 mg/100 g。 Using high-performance i]quid chromatography method, the sugar, mineral elements, amino acids, anthocyanins, organic acids, vitamins and other components of frozen blueberries producing in Majiang county of Guizhou were analyzed and measured. The results showed that the sugar content were 20.1 g/100 g, riched in calcium, iron, magnesium, phosphorus, potassium, selenium and some other kinds of mineral elements, and riched in 15 kinds of amino acids; Anthocyanin content was 704.82 mg/100 g, including malic acid, lactic acid, acetic acid, citric acid four kinds of organic acid; the arbutin content was 0.785 mg/100 g, folic acid content was 2.693 me./100 g.
