摘要
菜系是在长期的发展过程中形成的中国烹饪风味流派,鄂菜也不例外。鄂菜形成于湖北,但其影响已经超越了湖北的行政范围。考察鄂菜必须把它置于发展的时空范围下,研究鄂菜形成与发展的影响因素,从而探讨鄂菜生命力的源泉。
AS a local cooking style in China, cuisine including Hubei cuisine forms during timed development. Hubei cuisine formed in Hubei ,however, it's affection has been beyond Hubei province. It is principal that study Hubei cuisine in a view of time-space range. Study the factors which influents Hubei cuisine during form and development. And so explore the vitality source of Hubei cuisine.
