摘要
农产品的流变特性和质地决定其产后利用的途径和方式。目前,甘薯的产后食品加工利用已成为甘薯主要利用途径。为更有效地开发利用甘薯产品,对其流变特性与质地研究显得格外重要。为此,综述了迄今有关甘薯流变学特性、质地等方面研究的最新进展,并对其在农业方面的应用以及存在的问题进行深入探讨,以期为甘薯产后深加工利用提供必要的技术支撑。
The rheological properties and texture of agricultural products decide the ways of postharvest utilization.The food processing is one of the most important utilization ways for sweet potatoes.In order to exploit and utilize the sweetpotato products efficiently,it becomes very urgent to conduct research on rheology and texture of sweetpotatoes.So the most recent research progress on the rheological properties,texture of sweet potatoes were reviewed,the application in agriculture and some problems were discussed,so as to provide necessary technical support for postharvest utilization of sweet potatoes.
