摘要
本文针对冷、热真空包装豆沙馅料中菌落总数和大肠菌群进行了测定。试验证明，冷真空包装中菌落和大肠菌群可能超出国家标准，而热真空包装中菌落和大肠菌类不超出国家标准。
This article determined the colony total and coliform bacteria in bean paste stuffing foresaw of cold and hot vacuum packing. The experiment proved that, in the cold vacuum packing colony total and coliform bacteria possibly sur- passes the national standards, but in the hot vacuum packing colony total and coliform bacteria does not surpass the national standards.
