摘要 利用微胶囊技术可以解决传统工艺所不能解决的诸多问题,生产出具有良好功能性和贮存稳定性的新产品。综述了微胶囊技术的作用(改善物理性质、提高稳定性、屏蔽不良味道或气味、控制释放、隔离特殊用途的不相容物质、使药物具有靶向性)、制备原理与特点,以及其在食品工业中的应用研究,最后指出微胶囊技术存在的问题并进行展望。 The microencapsulation technology could solve many problems which could not be solved by the traditional process, and it could produce new products with good functionality and storage stability. The review described the technical characteristics of the microcapsules, the role of commonly used preparation principle and its applications in the food industry, and finally pointed out the problems and development prospects of microencapsulation technology.
