东北地区食用菌辐射保鲜应用前景

摘要 东北地区具有丰富的食用菌资源。新鲜食用菌采摘后仍进行着强烈的新陈代谢和呼吸活动,这导致新鲜食用菌易变色、老化和腐烂,为新鲜食用菌的保鲜带来了难题。通过总结食用菌的辐射保鲜研究现状,分析食用菌辐射保鲜效果的影响因素,探讨辐射保鲜卫生安全性,展望了食用菌辐射保鲜研究趋势和东北地区应用食用菌辐射保鲜技术的优势及前景。 Edible fungi resource is abundant in the Northeast of China. The metastasis respiration process is still running after the fresh edible fungi are picked up, which result in aging and decay of the fungi. In this paper, the current progress about edible fungi preservation was summarized. The factors related with effect of fungi preservation were analyzed and the tendency and prospect of fungi preservation in the Northeast was discussed.
