摘要
在不同温度(-10℃、0℃、10℃、20℃、30℃)下贮藏干银鱼,利用色差仪检测干银鱼的色泽变化并加以分析。结果发现:色值L*值、a*值和色差值△E*值均能很好地反映干银鱼不同温度下色泽的变化趋势,而色值b*值不能反映干银鱼的色泽变化;-10℃条件下贮藏银鱼色泽稳定,而10℃以内,干银鱼色泽随时间变化缓慢,温度越低色泽变化越缓慢,温度高于20℃时,色泽变化较快。
The dried whitebait were stored at different temperatures ( -10℃, 0℃, 10℃, 20℃ and 30℃ ), and the colour of whitebait determined by chromatic meter and the data were analyzed. The results showed that : chromaticity index L^* value, a^* value and chromaticity value △ E^ * could reflect the colour changes of dried whitebait under different storage temperatures except chromaticity index b ^* value; Rate of colour change increased with higher storage temperature, and the colour kept stable with temperature under -10℃ ,but changed very slowly with temperature was under 10℃, and very quickly with temperature was higher than 20℃ .
