摘要
谷氨酰胺酶是谷氨酰胺分解的关键酶,广泛分布于微生物与人体内。着重对其结构、性质,食品及医学领域应用前景、基因工程研究现状等方面进行综述,反映了谷氨酰胺酶在国内外的最新研究趋势与研究水平。
Glutaminase is a key enzyme of glutamine decomposition,it is widely distributed in organisms and human body.The structure,properties of glutaminase,and the application in food and medicine,genetic engineering research progress were reviewed,which reflect the research trend and level of glutaminase at home and abroad.
