摘要
采用硝基水杨酸比色法,测定三亚市主要供港澳蔬菜基地5个蔬菜品种的111个样品中硝酸盐的含量,并对其污染状况及食用安全性进行了评价。结果表明:在被采集的蔬菜中,硝酸盐含量由高到低依次为茄子>豇豆>辣椒>黄瓜>苦瓜。根据WHO/FAO规定的硝酸盐日允许摄入量换算得到的标准进行评价,5个蔬菜品种中硝酸盐含量都较低,符合国家蔬菜硝酸盐含量限值标准,均达到各种食用标准。
Through using nitro-determination of salicylic acid method,this article determined the nitrate content in five kinds of vegetables and 111 samples from the bases in the Sanya city and evaluated pollution level of nitrate and their safety for eating.The results indicated that the nitrate content of vegetables was not exceeding as following:the eggplant the cowpea the pepper the cucumber the bitter gourd.According to the Acceptable Daily Intake for man(ADI) value recommended by WHO /FAO,a safety evaluation of nitrate content in vegetables for human health was made.The results showed that five kinds of vegetables had a low nitrate content which met the national nitrate concentration limit standards and reached the edible standard in any way.
