摘要 目的以玉米淀粉为原料,采用压热法制备玉米抗性淀粉,并确定最佳工艺条件。方法采用热压法制备玉米抗性。结果通过正交试验确定最佳条件为:淀粉乳浓度为30%,压热温度为120℃处理60 min。结论在最佳条件制备抗性淀粉含量为11.37%。 Objective To determine the optimum condition during the process of producing resistant starch by autoclaved method with raw corn starch in the experiment. Method Autoclave method was chosen for the production of corn resistant starch. Results Through the orthogonal experiments, the optimum condition was proved as follows. The starch concentration was 30% , the temperature was 120 ℃ and the processing time was 60 minutes. Conclusion 11. 37% corn resistant starch could be obtained under the best condition.
