摘要
紫甘薯富含花青素,其大多以酰基化花色苷形式存在,种类多达二十种以上,难以直接进行定量检测。本文首次综合紫甘薯花色苷的提取和水解,使用盐酸水溶液超声提取紫甘薯花色苷,直接沸水浴水解将花色苷水解为花青素单体。通过高效液相色谱-紫外可见检测器进行定性分析,使用该方法对四川省13个品种的紫甘薯进行了分析,主要花青素均为矢车菊和芍药素。该法简便稳定,有望用于紫甘薯及其他植物中花青素的常规定量分析。
Purple sweet potato is rich of anthocyanidins in the form of acylated anthocyanins. There are more than 20 anthocyanins in purple sweet potato, thus they are difficult to be directly quantitatively determined. Herein the extraction and hydrolysis of anthoeyanidins in purple sweet potato were combined for the first time: after extracted under the ultrasonic irradiation with HCL aqueous solution the anthocyanins were directly hydrolyzed in burning water and converted into anthocyanidins. 13 purple sweet potato come from local market of Sichuan province of China were qualitatively analyzed via this method, and the majority of anthocyanidins are cyanidin and peonidin in all of the species analyzed. The method is facile and robust, which should be able to routinely determine the anthocyanidins in purple sweet potato and other plants.
