摘要
纤维素酶和果胶酶联合处理脱脂杏仁粉,经过前期试验得出:纤维素酶与果胶酶的使用比例为1︰2、酶用量为0.5%、处理时间6 h、料液比1︰10、温度50℃;后续碱法提取杏仁蛋白的最佳工艺参数:时间1 h、碱浓度1 mol/L、用碱量1︰5(m/V),此法的杏仁蛋白提取率可达95.16%。比较单纯的碱法提取,使用酶法辅助碱法提取可以提高杏仁蛋白的提取率10%左右[1]。
Defatted almond powder was treated with cellulose and pectase.Preliminary experiments concluded: the ratio of cellulose to pectase is 1︰2,the amount of enzymes is 0.5%,the ratio of solid to liquid 1︰10,process-time is 6 h,the temperature is 50 ℃;follow-up experiments use alkali to extract almond protein concentrate,they shows that the alkali concentration 1 mol/L,the ratio of solid to liquid 1︰5,process-time 1 h,the almond protein concentrate extraction yield can reach 95.16%.Contrast to the simple alkali method,enzymes aid alkali method can elevate the extraction yield as much as 10%.
