摘要
目的诱导红曲霉,增加红曲色素产量,确定最佳诱导条件。方法以D-青霉胺(H-Pen)为诱导剂,在红曲霉发酵过程中添加H-Pen,使红曲霉产生红曲色素,并观察色素产量的变化。选取诱导剂H-Pen加量、培养基pH、培养温度、培养时间以及每瓶装液量等五因素,做单因素实验,确定红曲霉产生红曲色素的最佳诱导条件。结果最佳诱导条件为H-Pen的添加量为0.000 7%,培养基pH为3.5,培养温度为30℃,培养时间为12 d,每瓶装液量为50 mL。结论优化得到的培养条件稳定,产红曲色素量明显提高。
AIM To induce Monascus to increase the production of Monascus red and to determine the optimal inducted conditions. METHODS The optimum cultural conditions of producing Monascus red was carried out on single factor experiments of five factors, including amount of H-Penicillamine ( H-Pen), pH value, incubation temperature, incubation time and substrate volume. RESULTS The optimal fermentation conditions were obtained by single factor experiments as follows : the amount of H-Pen was 0. 000 7% , initial pH 3.5, incubation temperature of 30 ℃, 12 d incubation time, 50 mL substrate volume in 250 mL shaking flask. CONCLUSION The culture op-timization is steady, and the production of Monascus red is noticeably improved.
