亚硝酸盐与癌的启动、演进的关系 被引量:7

摘要 0引言亚硝酸盐包括亚硝酸钠、亚硝酸钾等含亚硝酸根离子的无机盐,在自然界水体和土壤中广泛存在。亚硝酸盐具有抗菌、食品保鲜作用,是食品行业中常用的添加剂、发色剂和防腐剂。此外,其在纺织印染、摄影、医药及兽医行业等领域也都有广泛应用。
