摘要
为了解新疆克拉玛依市维吾尔族居民膳食营养状况,采用食物频率法对该地区401名维吾尔族居民进行膳食调查和营养评价。结果表明,克拉玛依市维吾尔族居民膳食种类比较单一,导致能量、碳水化合物、硫胺素、核黄素、钙等营养素未达到RNI的要求,而脂肪、胆固醇、盐摄入量偏高。提示硫胺素、核黄素、钙、镁为当地维吾尔族缺乏的营养素,建议对当地维吾尔族居民进行营养指导,注意补充易缺乏的营养素,降低其脂肪及盐的摄入量。
To study nutritioal condition, of Uygur residents in Karamay and thier dietary structure, among 401 Uygur of Karamay, using food frequency method to survey and analyze the dietary structure and nutritional status. The results show that the dietary structure of Uyghur population in Karamay was relatively absent diversity, cause the daily intakes of energy, carbohydrate, thiamin, riboflavin, calcium were insufficient. And the daily intakes of fat, cholesterol and salt were higher. It concluded the intake of thiamine, riboflavin, calcium, magnesium of Uygur residents in Karamay were insufficient, which suggests that to strengthen the Uigur national minority's nutrition instruction, supplement the Uignr national minority's needed nutrients, and reduce the Uigur national minority inhabitant's fat and salt intake.
