摘要 预包装食品致敏原成分标识管理已经在我国主要贸易国家和地区实施多年,其管理的行业基础是预包装食品生产管理体系中严格的致敏原控制。介绍了致敏原交叉污染的风险分析方法,包括风险评估、风险管理、风险交流和风险评审。 The labeling management of allergen ingredients in prepackaged foods,of which the industry basis is the strict allergen control during the whole process of food manufacturing management,has been implemented in our major trading countries and regions for several years.The risk analysis methods for allergen cross-contamination including risk assessment,risk management,risk communication and risk review were introduced.
