儋州市居民膳食结构与营养健康状况调查

Survey of dietary structure and nutritional status of the residents in Danzhou City

摘要 目的了解海南省儋州市居民膳食结构、营养素健康现况,为当地制定相关政策、指导居民合理饮食提供依据。方法调查采用分层多阶段整群随机抽样的方法,包括询问调查和膳食调查等。利用连续3d24h回顾法调查食物数据、家庭食物称重法记录的家庭调味品消费量数据和家庭人均年收入数据,应用SAS软件进行统计分析。结果儋州市居民谷类、畜禽肉摄入量与全省平均摄入量相当,其余食品摄入量低于全省水平。蔬菜、水果、鱼虾、蛋类、奶类、豆类摄入不足。宏量供能营养素蛋白质摄入比例是适宜的,但是脂肪与碳水化合物供能比是不适宜的。营养不良人群占比例为43.6%。结论儋州市居民膳食结构不尽合理;基本营养素摄入得到满足,但某些营养素依然缺乏。 Objective To investigate the dietary structure and nutritional status of residents in Danzhou City,Hainan Province and provide evidence for guiding the residents for a balanced diet.Methods A stratified and multistaged random clustering sampling method was used to survey the dietary structure and nutritional status of the rsidents in Danzhou City and the results were statistically analyzed.Results The quantity of intake of grains,poultry and animal meat by the residents was equivalent to the the provincial average level.While the intake quatity of the foods was lower than that of the provincial average.The intake of vegetable,fruit,fish/shrimp,egg,,milk and beans was insufficient.The intake of nutritional elements and protein was adequate,but the intake of fat and carbohydrate were inadequate.The malnutrition population accounted for 43.6%.Conclusion The dietary structure is inadequate,the elemental nutrional elements is sufficient,some nutrional elements are lacking.
