摘要
目的考察几种蛋白酶对蛤蟆油黏度的影响。方法以蛤蟆油黏度为评价指标,考察碱性蛋白酶、木瓜蛋白酶、胰蛋白酶和胃蛋白酶对蛤蟆油黏度的影响。结果碱性蛋白酶对蛤蟆油黏度的影响最大,酶解30 min即可使黏度由最初的374.72 cP降至8.40 cP;而木瓜蛋白酶和胰蛋白酶对蛤蟆油黏度的影响较小,酶解时间较长,酶解120 min可依次由374.72 cP降到233.58 cP和47.39 cP;胃蛋白酶对蛤蟆油的黏度影响不明显。结论采用碱性蛋白酶对蛤蟆油进行酶解,可明显降低其黏度,此方法时间短、效果好。
Objective To study the effects of several protease on viscosity of Oviduetus Ranae.Methods The effects of several protease including alkaline protease,papain,trypsin and pepsin on the viscosity of Oviduetus Ranae were studied.Results Alkaline protease had the greatest impact on the viscosity,whith could make the viscosity drop from 374.92cP to 8.40cP within 30min;while papain and trypsin had less impact on the viscosity,needing longer hydrolysis time,which could make the viscosity drop from 374.92cP to 219.55cP and 33.49cP within 120min,respectively;pepsin almost did not work.Conclusion The viscosity of Oviduetus Ranae can be reduced by hydrolyzing it with alkaline protease.The method is rapid and effective.
