Establishing a traceability system in the food supply chain can significantly impact the moral hazard problem associated with producing safe food. The accuracy of the traceability system determines the allocation of liabilities for food safety, which determines the proportion of the costs of food safety that can be allocated to the responsible supplier. In this paper,we establish a principal-agent model for food safety to identify the minimum level of traceability needed to mitigate moral hazard in the food supply chain.Base on which,we discuss the related Food safety regulatory policies.
