摘要
目的建立食品中水分含量的快速测定方法。方法利用水分测定仪直接测定食品中水分含量,并与直接干燥法测定结果进行比较。结果水分测定仪法测定湿粉、海带、腊肠、冬瓜糖等样品中水分含量其相对标准偏差(RSD%,n=7)为0.29~1.16,与直接干燥法测定食品中水分结果比较P>0.05两种方法无显著差异。结论水分测定仪测定食品水分快速、准确,适合食品中水分的测定。
Objective To establish a rapid method for determination the water content in food.Method Determination the water content in food by moisture test apparatus,and the results comparison to direct drying method.Results Water content relative standard deviation(RSD%,n=7) of wet powder,kelp,sausages,sugar gourd which detected by moisture test apparatus was during 0.29 to 1.16,comparison with direct drying method,there was no significant difference between the 2 methods,P0.05.Conclusions Using moisture test apparatus to detect the water content in food was accurate and rapid,it was suit for determination the water content in food.
