摘要
对罗非鱼原料与罗非鱼片重量分布的相关性进行分析,结果表明,采用分级技术后401—650g重量等级的罗非鱼原料加工所得重量在3.01—5.00盎司规格的鱼片比例达86.0%,高于未分级前的78.1%。提出了罗非鱼原料分级加工的基本工艺流程。
In this paper,the studies on the weight distribution correlation between raw tilapia and tilapia fillet were analyzed.The results showed that the proportion 401-650 g raw tilapia processed to 3.01—5.00 oz tilapia fillet to 86.0% after by grading technique,78.1% higher than that without grading technique.The basic process of raw tilapia grading processing is proposed.
