摘要
食源性致病微生物是影响全球食品安全和危害人体健康的主要因素之一。对食源性致病微生物进行风险评估是保障食品安全、促进食品贸易和健全食品安全体系的重要手段,该项工作已成为制定食品安全标准和提供食品安全管理措施的重要依据。本文简要介绍了微生物风险评估的内容及分类,对近年来国内外食源性致病微生物风险评估的研究进展进行综述,并提出目前我国微生物风险评估中存在的主要问题和开展食源性致病微生物定量风险评估的建议,以期为食源性致病微生物风险评估的开展提供参考。
Food - borne pathogens are of immediate and serious concern to food safety and human health. Risk Assessment is a key method used to establish standards, guidelines and other recommendations for food safety. Risk assess- ment on food -borne pathogens not only protect food safety and human health, but also enhance consumer protection and facilitate international trade. Conceptions, classification and contents on microbiological risk assessment were in- troduced in this paper. Progress in research of risk assessment on food - borne pathogens at home and abroad was summarized. Main problems in microbiological risk assessment in China at present were pointed out and advices were given on quantitative microbiological risk assessment.
